Canvas (or the browser encoder) writes a WebP that is usually smaller than the JPEG at a similar visual quality. This is still a lossy generation: you cannot recover the original JPEG bitstream.
Web performance vs archival masters
Use WebP for hero images on sites that no longer need IE11. Keep a master JPEG/PNG in backup. PNG to WebP is the path when the source has transparency.

Re-encoding typically drops camera metadata. Assume GPS and camera tags are gone.
